WHere is a home-style version of a drink found on a new menu. It's a party-sized prepared mix that's loaded with essence of the Christmas time, making it excellent for your celebration. Any leftover syrup for morning drinks, sweets, or to make more rounds of bikinis.
Bikini
Serves 10 people
For the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Drink (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Combine all the ingredients into a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Then, turn off the heat and leave to cool fully. Decant into a sealable bottle, cap it and refrigerate it chilled, it can be stored for about a month.
Preparing the Premix: Pour the specified spirits and syrup into one big jug, let it rest for an hour, then pass it through preferably using a fine cloth, so it's fully clarified.
For serving: Measure 85ml of your cocktail base into a mixing glass containing ice, and stir lightly for one minute until cold. Filter into an chilled martini glass or a similar vessel, garnish with some cranberries and finish with a brief mist with the mandarin essence over the top.
